Use juice and water when making salad dressings skip the oil

Toasted Chickpeas

Serves: 2-4
Prep Time: 5 minutes
Cook Time: 15 minutes
 
Ingredients:
2 cans chickpeas/garbanzo beans rinsed and drained
1 tsp. coconut oil
1 tsp. salt
1/2 tsp. ground cumin
½ tsp. garlic powder
 
Directions:
Pre-heat oven to 400 degrees.  Mix all ingredients except oil in bowl.  Place on baking sheet and add oil – not necessary to spread oil will melt and then you can toss after 2 minutes in oven.  Place in oven. After oil melts toss all chickpeas with oil. Cook an additional 10-12 minutes stirring occasionally until crispy.
 
This is a kid favorite in my house.  So fast and easy I make these in the morning for their lunch buckets.  These can also be added to soups to increase the heartiness and adds additional protein.  You can keep these for a few days in a sealed container in fridge after they have cooled completely.
