Thai Slaw

Thai Slaw
 
Prep time: 20 minutes
Serves 6
 
Ingredients:
 
½ Head Shredded Napa Cabbage
2/3 cup shredded or spiralized carrot
2 cucumbers diced
2 tbsp. chopped raw peanuts
2 to 3 tbsp. chopped cilantro
 
Peanut Thai Dressing:
 
3 cloves garlic, minced
2 tbsp. natural peanut butter

Juice of 1 lime 
1 tbsp. rice vinegar

1 tbsp. peeled and minced ginger

½ tsp. toasted sesame oil
1 tbsp. rice vinegar
1 tsp. agave nectar
Directions:
 
Place shredded cabbage, carrot, cucumbers, peanuts and cilantro in a large bowl and toss.
 
In your high-speed blender or food processor puree all ingredients for dressing until mixed well.
Toss salad with dressing and serve immediately.  If you need to make in advance wait to add dressing.
