Use spices instead of oil to give food flavor

Spiralized Thai Zucchini Salad

Spiralized Thai Zucchini Salad

 
Prep time:  15 minutes
Serves 6
 
Ingredients:
 
1 cup red pepper diced (~1 red bell pepper)
1 cup cucumber diced (2 small cucumbers)
1/4 cup red onion diced
1/2 cup cilantro chopped
2 tbsp. rice vinegar
1 large zuchinni spiralized
1 carrot spiralized
2 tbsp. black sesame seeds
1 can chickpeas (or edamame)
1 tsp. garlic powder
3 tbsp. lemon juice
1 tsp. fresh ginger minced
1/2 cup dry roasted peanuts
Directions:
 
Place all ingredients in a large bowl and toss.  Serve immediately.
 
Tip: The Zucchini noodles will “sweat some”  If you have time I like to put mine on a cooling rack and sprinkle with salt for an hour or so then pat dry.
