Quinoa, Brown Rice, Legumes-all great sources of protein!

Good for you Guacamole Salad

Prep Time: 5 minutes
Serves 2
1 Avocado – peeled and cut in to large pieces
3 cups spinach/kale mix chopped
8 grape tomatoes halved
¼ cup chopped cilantro
Juice of a lime
1/4 tsp. jalapeño minced optional)
½ tsp. cumin
½ tsp. agave or maple syrup
salt and pepper to taste
Place spinach/kale mix in a bowl.  I like to buy a pre-mixed, organic pre-washed mix but you could also make your own.  Add the rest of the salad ingredients.  When ready to eat add dressing.  If you are taking this with you for lunch you can add the avocado right before eating or add a little lime juice to avocado on salad to keep from turning brown.
This is one of my favorite salads.  Who doesn’t love guacamole? Right?  But who wants all of those calories and fat. This salad will give the satisfaction of eating the guacamole with only a smidgen of the calories!
