Sweet Potato Hash

Sweet Potato Hash
Prep Time: 10 minutes
Cook Time: 20 minutes
 
Ingredients:
 
5-6 Sweet Potatoes Peeled and cubed
1 red onion diced
1 red bell pepper chopped
1 can black beans rinsed
Salt and Pepper to taste
Oil and/or Vegetable broth to sauté and roast with
Directions:
 
Heat oven to 400°F and line a baking sheet with parchment paper.  Use either vegetable broth or a tiny amount of oil on the parchment paper and place sweet potatoes on paper and place in oven.  Cook until sweet potatoes are soft and slightly browned (~20 minutes).  I like to turn mine after 10 minutes to brown both sides.
 
In the meantime place the onion and red bell pepper in a pan and sauté with vegetable broth or minimal oil until tender.
 
After potatoes are done.  Mix the beans, potatoes, onions and peppers together.  Salt and pepper to taste.
 
Serve with your favorite grain.  We love brown long grain rice with this one.
 
We were away and many of the resturants had potato hash on their breakfast menu, of course it was a more traditional hash with potatoes, vegetables and eggs so I didn’t have any.  When I came home I was craving a “hash” and had some sweet potatoes that were getting rather old.  Threw this together and it became a family favorite.  Who doesn’t love sweet potatoes? Extremely easy and a crowd pleaser!
