Super Greens and Beans

Serves 4

Cook Time: 10 minutes
4- 6 cloves of garlic minced
½ yellow onion chopped
6 cups greens (kale, spinach, collards) cleaned and rinsed. If using kale remove stems.
2 cans cannellini beans rinsed and drained
Crushed red pepper to taste
Salt and black pepper to taste
Veggie broth to keep moist
In a large skillet on med – high heat add garlic and onion with a little vegetable broth and cook until onion is translucent.  Use broth when needed throughout cooking process to keep from burning and/or sticking to pan. Next add prepped greens.  Tossing with onions and garlic until wilted.  Then add beans and cook until beans are heated thoroughly. Remove from heat and add salt, red pepper and black pepper to taste.
Greens & Beans is a classic southern comfort food.  This will still deliver the great flavors and combination without the added fat and calories with cooking with oil. Quick, Easy and packed with all the essentials.  This will sure to be a new famiy favorite!
