Smoky Crock Pot Chili

Serves 6-8
Prep Time: 15 minutes
Cook Time 4 hours
1 large sweet onion peeled and chopped
6 garlic cloves minced
1 red bell or green pepper chopped
1 jalapeno seeded and chopped (optional)
4 tbsp. chili powder 
1 tsp. ground cumin
1 tsp. paprika
¼ tsp. cayenne pepper (optional)
1 can black eyed peas
2 can kidney beans
1 can cannellini beans
1 can black beans
2 cups vegetable broth
2 14 oz. can fire roasted tomatoes with chilies
2 tbsp. tomato paste
2 tbsp. chia seeds
1 cup frozen corn
½ cup of your favorite barbeque sauce
Salt to taste (I usually use at least 2-3 tsp.)
2 handfuls chopped spinach or kale (1 frozen package frozen spinach)
Place all ingredients into crockpot.  I do not drain beans or tomatoes. If you choose to you will need to add more vegetable broth.  Cook in crockpot for 4 – 6 hours on high or 6-8 hours on low.
Stove Top: 
If you wanted you could definitely cook this in a pot on the stove.  I would start with a little vegetable broth and cook the onions and garlic until soft.  Then add the green/red bell pepper until soft.  Add all of beans and additional ingredients.  Simmer on low until flavors have mixed and onion and peppers are soft (approximately 1 hour).
