Potato and Leek Soup

Serves 6
1 large sweet yellow onion chopped
2 leeks green and white parts chopped
2 carrots chopped
8 Gold Potatoes Peeled and quartered
4-6 cloves garlic
6 cups vegetable broth
Salt and pepper to taste
Place onion, carrot, leeks, and galic in a large pot over medium high heat with a small amount of vegetable broth. Sprinke with salt.  Saute for 5 minutes or until browning slightly.  Add vegetable broth and potatoes and Simmer until potatoes are soft.  When potatoes are cooked completely turn heat off.  Use either an immersion blender or food processor to process soup until desired texture.  I prefer this to be super creamy.
Top with chopped fresh parsley and serve.
