Peanut Zucchini Noodles

Serves 4-6
Peanut Sauce:
¼ cup natural peanut butter
¼ cup soy sauce
¼ cup agave syrup (you could also substitute honey, or brown sugar)
2 cloves garlic
¼ cup rice vinegar
2 large Zucchinis spiralized
Place all of the peanut sauce ingredients in a high-speed blender and blend until smooth. Set aside.
Use vegetable spiralizer to make zucchini noodles.  After you have them spiralized place them in skillet over med heat for 2-3 minutes stirring frequently so that they do not stick.  You may need to add a little vegetable broth here.  Remove from heat when wilted.  I usually squeeze my noodles now in cheesecloth to reduce the amount of moisture from the noodles when mixing with the peanut sauce.  Place noodles in serving bowl and toss with sauce and serve immediately.
If you have a garden you know once the zucchinis are ready you cannot keep up with them.  This is a great way to use those oversized ones that you couldn’t use in time. I love zucchini noodles or for that fact any type of vegetable noodle.  Whoever invented this was a genius.  Processed pasta is not natural and not healthy for us.  This gives us the same comfort feeling but without the guilt and all of the vegetables.  This is definitely a kid favorite!
