Lentil and Corn Tacos

Prep time: 5 minutes
Cook time: 20 minutes
2 cups frozen corn
2 ½ cups cooked lentils (I love to use Trader Joe’s pre-cooked lentils which takes off 15 minutes of cook time!)
1 tsp cumin
1 tsp. chili powder
1 small onion chopped
3 cloves garlic minced
Juice of ½ lime
Vegetable broth for sautéing
Suggested Serving & Toppings:
Chopped fresh Spinach
Lime wedges
Broccoli slaw
Sriracha drizzle
Corn Tortillas
Place onion and garlic in skillet for sautéing with a small amount of vegetable broth.  Cook until onion is soft.  Add corn until thawed.  Remove from heat stir in cumin, chili powder, lime and cooked lentils.  
Serve on corn tortillas with suggested toppings.
We love tacos at our house.  We have them almost weekly.  However they are never the same.  The kids love this one with the corn and lentils.  We always use chopped spinach as a topping to give it some extra green power.  Kids have never noticed its spinach and not traditional lettuce.  You can also give them some sliced or mashed avocado or salsa to give some extra kid friendly flavors.
I love this recipe because it can be cooked in under 10 minutes if you have pre-cooked lentils.  Just cook the onions and the garlic and then mix the rest in and you will not believe the flavor in this vegetable protein packed taco.
