Guilt free Creamy Tomato Basil Soup

Cook Time: 30 minutes
Serves 6-8
4 large vine ripened tomatoes cubed ( 1 can whole tomatoes with juice)
6 oz. can tomato paste
1 large Yukon gold potato peeled and cubed
4 cloves garlic
6 cups vegetable broth ( I prefer Imagine no-chicken broth)
10 basil leaves
2 small yellow onions cubed
Crushed Red Pepper flakes (optional)
Salt and Pepper to taste
2 tbsp. earth balance (optional you could use veggie broth here I like to add just a little to give a richer taste especially when I am having company but for just us always just use vegetable broth)
In a large saucepan place onion, garlic and vegetable broth/butter cook over med-high heat until onion is translucent.  Place remaining ingredients in pan except for basil.  Cook until potato is tender.  When potato is tender remove from heat and add the basil leaves.  Use an immersion blender until soup is smooth and creamy.  If you do not have an immersion blender (definitely put it on your next birthday list!) you can remove soup and place in a high-speed blender or food processor until smooth. Then add back to pot and bring back to desired temperature.  Add salt and pepper to taste.  Serve immediately.
