Garden Lasagna with Cashew Ricotta

Garden lasagna with Ricotta cashew cheese

 
Serves 6-8
Prep Time: 30 minutes
Cook Time: 60 minutes
 
Ingredients:
 
1 large ripe tomato sliced
2 cups marinara sauce
1 cup mushrooms, sliced thin (I like to use crimini)
½ cup daiya mozzarella shreds
2 cups spinach chopped
1 box whole grain lasagna noodles
1/4 cup fresh chives chopped
¼ cup fresh basil chopped
 
Ricotta:
2 cups raw cashews soaked in water for at least an hour
3 fresh garlic cloves


1/4 cup plain unsweetened almond milk

3 Tbsp lemon juice


1/3 cup fresh chives

1 tsp black pepper
salt to taste

 
Garlic Marinade:
5 chopped garlic cloves
½ cup basalmic vinegar
3 tbsp Italian seasoning
1 tsp black pepper
 
Directions:
 
First combine all marinade ingredients in a large bowl. Prep & cut all of your vegetables.  The thinner you slice them the faster the marinade will be absorbed.  Place the sliced vegetables in the marinade..  Marinate for at least 20 minutes.
 
Make the Ricotta by combining all of the ingredients in a high speed blender and set aside.
 
Cook noodles according to package for aldante.
 
Begin putting your lasagna together by layering sauce, noodles, mushrooms, sauce, noodles, greens, sauce, noodles, ricotta, sauce noodles, tomatoes, cheese chives and basil.  You can mix it up and do it anyway you like.  Just be sure to put sauce at least on once side of noodles in each layer to keep moist.  I even like to pour the marinade over the top of the lasagna to help with moisture.
 
Cover with foil until ready to bake at 400 degrees for 45 -60 minutes.   I like to keep mine covered in foil until the last 10-15 minutes.  If you are baking from fridge you will have to add 10 minutes to time because of the starting temperature of food.
 
To make this gluten free or to increase the healthiness of this use Zucchini in place of the pasta noodles sliced thin. It will take 2 large zucchinis to do this and cooking time may decrease slightly. This is a great one to make on a Sunday and then bake later in week.  You can also freeze this and it holds up well!
