Farmer's Market Gazpacho

Serves 4-6

 8 ripe tomatoes diced
1 large cucumber seeded diced
1 green pepper diced
4 garlic minced
1 medium red onion diced
3 cups tomato juice
1 medium zucchini seeded diced
2 stalks celery diced
salt and pepper to taste
4 tbsp. balsamic vinegar
4 tbsp. soy sauce
Sriracha 6-8 drops (optional)
Can add: jalapeno, lime juice, fresh cilantro or basil, serve topped with fresh avocado
Keep 1/3 of veggies aside in bowl for adding later.  Place the rest of the vegetables in a high-speed blender and blend until smooth.  Add to bowl with the vegetables that you have set aside.  Add tomato juice, vinegar, soy sauce, sriracha, and salt and pepper to taste.  
This can be kept in the fridge for 5 days in a sealed container.  The longer you let this sit the more the flavors will blend.  I love adding whatever I find cheap at the farmers market.  This is great for lunch or for dinner as a side.  You can eat as much as you want no calorie counting with this as it is all vegetable based with no fat!
