Curried Cabbage and Chickpeas

Serves 4-6                                  
Prep Time 10 minutes
Cook Time 10 minutes
1 head green Napa cabbage chopped
1 large yellow onion chopped
4-8 garlic cloves minced
2 cans garbanzo beans drained & rinsed
Curry Powder 3 tbs to taste
Red pepper flakes (optional)
Vegetable broth for sautéing
Salt and Pepper to taste
Saute garlic and onion then add cabbage when cooked al dente remove from heat and add curry powder, beans and other seasonings to taste.  If dry you can add vegetable broth to moisten.
I like to cook this in my cast iron skillet to add flavor without adding oil.
This can be served over rice if you want or just by itself.
You can adjust the curry powder in this so that everyone will enjoy.  This is a quick and easy recipe but with complex flavors that will sure to satisfy anyone's taste palate.  Make sure to get a quality curry powder and that it is not outdated to keep the flavor fresh!
