Caramelized Leek and Lentil Soup

Caramelized Leeks
4 Leeks chopped and washed
4 tbsp. balsamic vinegar
½ cup vegetable broth
1 tsp. oil
1 tsp. salt
2.5 cups green lentils
5 carrots chopped
5 garlic cloves minced
2 leeks chopped and washed
2 tsp. salt and 1 tsp. black pepper
½ cup parsley
6 cups vegetable broth
Prepare leeks, carrots, and garlic place in a large pot on medium-high heat with 2 tbsp. of vegetable broth and cook for 5 minutes until vegetables have some color.  Then add vegetable broth and leeks and bring to a boil.  Once boiling reduce heat to simmer for 30 to 40 minutes until vegetables are tender and lentils are cooked to desired tenderness.  When soup is done stir in parsley and then top with caramelized leeks and serve immediately.
While soup is simmering place leeks, balsamic vinegar, salt, vegetable broth and oil in a pan on medium heat.  Stirring often until leeks are browned and caramelized adding more broth if necessary to keep from burning.
This is a super easy quick meal that everyone loves.  This soup makes a hearty meal that the kids and adults will be asking for again and again.  The caramelized leeks really make this a stand out!  
You can also substitute carmelized onions for the leeks.  Both make this a super tasty meal.
