Black Bean and Corn Burgers

 
Serves 4-6

Ingredients:
 
2 can Black Beans drained and rinsed 1 small red onion diced
2 cloves garlic minced
1/8 – 1/4 tsp. jalapeño (optional)
1⁄2 cup rolled oats
1⁄2 cup frozen/fresh corn 1⁄2 tsp cumin
1⁄2 cup cilantro chopped 1⁄2 tsp. chili powder Pepper to taste
Salt & Pepper to taste
 
Directions:
 
Mix all ingredients. I use my hands to smash black beans so that there are some whole to give the burger texture. Taste mixture and adjust salt & pepper. Form bean mixture into patties. You can either cook these in oven for 10 minutes on a cookie sheet or grill on medium heat for 3 to 4 minutes a side.
 
Serve immediately with avocado or guacamole and tomato garnish on your favorite whole grain bun or bread.
Many black bean burgers that are available in restaurants and pre-made have egg or milk in them. I tried many recipes before perfecting this one. Just moist enough with lots of flavor! We have served these as sliders too and of course plant-based or not kids and adults love them.
