Best Beet Burger

Ingredients:
 
5-6 medium beets
3 garlic cloves minced
1 bunch of Curly Kale chopped
1 carrot minced
1/2 cup onion minced
1 tbsp. rosemary minced
1 cup chickpea flour
1 cup rolled oats
1 flax seed egg
1/2 tsp. salt
1/4 tsp. pepper
Ezekiel toast
2 avocados sliced
Directions:
 
Roast, grill or boil beets until soft. I love to grill mine in the summer just gives them a little extra summer flavor! 
Place beets in a food processor and pulse until all big pieces are gone.  You still want there to be some texture.
 
Place Beets and all other ingredients in a large bowl except for avocado. Mix together.
 
Make beet mixture into burger patties. This should make 4 nice size patties. Heat grill or grill pan on high. Place beet burgers on grill and cook each side for 6-8 minutes turning and repeating.
 
This recipe does take a little of extra time and work.  When I make them I usually double or triple the batch and then freeze the patties for future use.
 
I serve this on Ezekiel toast or whole wheat buns with a slice of avocado and kale slaw!
