Basil and Pine Nut Quinoa

Serves 4-6
Prep time: 5 minutes
Cook time: 20 minutes
2 cups organic quinoa rinsed (I buy pre-rinsed)
1 cup pine nuts
¼ cup chopped fresh basil
Salt & Pepper to taste
Cook quinoa according to package directions.  When done remove from heat and add pine nuts and chopped basil.  Last season with salt and pepper to taste.
This is a favorite by my kids and we usually have this or some other form of quinoa at least twice a week.  Great protein source with great flavor and it cooks really quickly so during the week it’s fast and easy.  Quinoa can be cooked ahead of time and then stored in fridge for up to a week.  I usually cook mine in my rice cooker.
