Limit nuts eat fruits and veggies

Mashed Potatoes

Prep Time: 5 min
Cook time: 30-40 minutes
Serves: 6-8
 
Ingredients:
 
5 lb Russet Potatoes
No chicken Vegetable Broth
Non Dairy Milk
Salt and Pepper to taste
 
 
Directions:
 
Peel and Cut potatoes into cubes the smaller the faster they will cook and the easier it will be to mash them.  Place in a large pot of boiling water so that all potatoes are completely covered.  Boil until tender (you want them soft but not falling apart)  This usually takes about 40 minutes.
Drain potatoes after they are done.  Either place them in a bowl or back in pan to mash.  Using a mixer, add non dairy milk and vegetable broth to mash and make potatoes creamy and soft.  After they are smooth and creamy add your salt and pepper to taste.
 
Tip: Add liquid slowly because you don’t want them runny! (I did this once when I was learning to cook as a teenager at my grandmothers on Thanksgiving.  My grandfather still hasn’t forgotten!  
 
Serve Immediately with either my homemade gravy.  Or if you want, Tofurkey makes a delicious holiday gravy that is a nice treat this time of year.  Luckily they only produce it around the holidays so you don’t have to worry about becoming addicted.  I like to thin the gravy with a little vegetable broth it is pretty thick.  You can find it at whole foods and other specialty health grocers this time of year.
